Spaghetti Squash






I made Spaghetti Squash for dinner the other night.  My family loved it and they would like us to eat it again.  Here is the recipe:


1 spaghetti squash, halved lengthwise and seeded
2 tablespoons veg. oil (I used olive oil)
1 onion, chopped
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3/4 cup crumbled feta cheese (did not have this used shredded cheese)
3 tablespoons sliced black olives
2 tablespoons chopped fresh basil (did not have and did not miss it)


Directions....
1. Preheat oven to 350 degrees F. Lightly grease a baking sheet.


2. Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 - 45 mins in the preheated oven or until a sharp knife can be inserted with only a little resistance.  Remove squash from oven and set aside to cool enough to be easily handled. 


3. Meanwhile, heat oil in a skillet over medium heat.  Saute onion in oil until tender.  Add garlic, and saute for 2 - 3 mins.  Stir in tomatoes, and cook only until tomatoes are warm.


4. Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl.  Toss with the sauteed vegetables, feta cheese, olives, and basil.  Serve warm.


I added chicken to make it a meal.  Otherwise it is more like a side dish.  We were able to get two meals out of this.

  1. Karla, We too love spaghetti squash. We just
    take the squash, cut it in half lengthwise,
    and microwave it for about 15 - 20 minutes or until tender. We then scoop out the stringy
    plup and add butter while it's still hot. We love it just like that, but your recipe sounds
    great. Janet uses it with spaghetti sauce and
    in place of rice for dishes like beef tips.
    It's different at fist, but it grows on you.
